Cook the broccoli or frozen vegetable mixture in boiling water for a few minutes. Then pour off the vegetables and chop them into pieces the size of rice grains in a food processor. Mix these with the cheese and eggs and season.
Shape the mixture into small balls or nuggets with the help of 2 spoons and place on a baking sheet. Bake the balls at 180 degrees fan-assisted until they are lightly browned, then turn them carefully and bake from the other side. Baking took me about 8 minutes per side.
You can also make the balls from fresh vegetables. B. cauliflower, carrots and everything that has a fairly firm and dry consistency - or instead of Parmesan another grated cheese such as. B. Use Gouda.
The vegetable balls are great as a side dish to meat, and so you can bring unpopular vegetables closer to children.
