Instructions

  1. Remove the broccoli florets from the stalk, wash and cut into bite-sized pieces. Then dice the onion and coarsely grate the cheese (if not already grated).
  2. Sauté the broccoli (if it is fresh) together with the onions in a little olive oil in a pan with the lid closed and over medium heat for about 5 minutes.
  3. Mix the eggs in a bowl with a fork. This results in a beautiful marbled structure.
  4. Add the eggs to the pan and let set for 1 to 2 minutes. Now add the cheese. I always put a chili and some parsley on top of the frittata. This ensures a piquant, fresh taste. Salt and pepper and sprinkle with some paprika powder. Let everything set for about 15 minutes over low heat until the top of the frittata is no longer wobbly, but firm and airy.
  5. Alternatively, you can let the fritatta set in the oven at 200 ° C top / bottom heat for about 5 minutes.
