Instructions

  1. First, roughly cut the onion and fry it in a saucepan until translucent. In the meantime prepare the vegetable stock and roughly chop the broccoli.
  2. Fry the broccoli and possibly the garlic briefly, then deglaze everything with the broth. The broccoli should just be covered, you can always add more broth later.
  3. Let everything simmer for about 20 minutes on a low flame so that the vegetables become soft. Then briefly put a bag of coconut cream in the pot so that it becomes soft or put it in hot water.
  4. When the cream is soft, set the stove to the lowest setting and add the cream and the washed mint leaves to the soup, then puree. Depending on the consistency, you can also add broth. Now season to taste with the mentioned spices.
  5. As a starter, the soup is enough for 4 people, as a main course for 2.
