Instructions

  1. Finely dice the onions and sauté in oil with the garlic cloves. Quarter the courgette and mushrooms and sauté briefly. Add the broccoli and deglaze with the stock. Let it simmer with the lid on!
  2. Add normal peeled tomatoes. Season with a generous spoon of ajvar and spices. Stir in the cremefine / cream!
  3. Cook pasta al dente! Just before the noodles are done and the vegetables are cooked in the sauce, add the cherry tomatoes so that they don`t overcook and it still looks nice (the eyes eat too)
  4. Drain the pasta, serve with the sauce and sprinkle with Parmesan cheese if you like!
  5. The vegetables can also be exchanged, expanded. Depending on the season. E.g. artichoke hearts, peas, peppers, whatever you like.
  6. Feta with it is great too.
  7. If there are leftovers, you can mix everything together and bake the next day in a baking dish with cheese!
