Braise the onion pieces in a little oil. Add the potatoes and peppers and deglaze with a little water. Put the stove on low heat and place the broccoli with the potatoes. Cover everything with the lid and cook until the potato pieces are soft, which takes about 15-20 minutes. Finally add the coconut milk. Puree the soup and season with salt and pepper.
Serve the broccoli soup with herbs and chilli.
Tips:
I still like something to bite into in the soup and I just puree the soup a little or take some broccoli bits aside and put them back on the soup for serving.
If you like it a little hotter, you can serve it with chilli.
