Instructions

  1. Preheat the oven to 200 ° C fan-assisted air. Place a fat pan or a deep baking sheet under the wire rack and line it with baking paper, you will need it later.
  2. Wash the chicken thoroughly and dry.
  3. Use olive oil, cumin, paprika, lemon juice, sage, lovage, marjoram, sugar, pepper and salt to make a very spicy, strong marinade, if necessary work with other amounts of spice, depending on the taste.
  4. Peel and quarter the onion and garlic clove, then pour into the chicken. Fix the legs and wings with kitchen twine, placing the legs so that the opening of the chicken is closed and the onion or garlic clove cannot fall out. Brush the chicken with the marinade, save the rest and place breast-side on the oven shelf. Choose one of the lower rails so that the bird is as close to the center of the oven as possible.
  5. Now peel the potatoes and cut into thin sticks. Season with the rest of the marinade. The best way to do this is to put the fries in a plastic box, pour the marinade over them and shake vigorously.
  6. Turn the chicken over after 30 minutes of cooking. After a further 10 minutes, the marinated French fries are placed on the baking sheet under the grid and baked in the frying fat of the chicken for 20 minutes. If the chicken was very fat, drain some, the fries shouldn`t take a swimming course and shouldn`t get mushy. Neither the chicken nor the fries require further attention. When the cooking time is up, remove the kitchen twine from the chicken and serve.
