Instructions

  1. In a small bowl, mix the brown sugar and mustard together.
  2. Separate the bacon slices, add to the marinade, and carefully work the mixture in by hand (the thin bacon may crack easily).
  3. Cover and refrigerate the marinated bacon until ready to bake.
  4. Preheat the oven to 200°C (392°F) with top/bottom heat.
  5. Grease a baking sheet.
  6. Arrange the bacon slices lengthways on the baking sheet.
  7. Bake on the middle oven rack for 10–20 minutes until crispy and brown.
