Instructions

  1. 1. Beat the egg white and 1 pinch of salt with the hand mixer until stiff. Sprinkle in 40 g of sugar and beat for another 2 minutes.
  2. 2. Mix butter, 40 g sugar, 1 pinch of salt and vanilla sugar with the hand mixer for 3 - 4 minutes until very creamy. Briefly stir in the egg yolks. Mix the flour, starch and baking powder. Mix in flour mixture and mineral water alternately at a slow speed. Stir in 1/3 of the egg whites, carefully fold in the rest with a spatula.
  3. 3. Heat a bubble waffle iron according to the instructions. Lightly oil the baking surfaces. Place 1/6 of the waffle batter in the center of the waffle iron and spread it quickly with a pallet so that the batter runs into all the wells. Close the waffle iron and immediately turn the waffle iron over. Bake the waffle for 2 minutes. Then turn the waffle iron again and bake for 1 - 2 minutes, so that a golden brown waffle is formed.
  4. 4. Carefully lift the waffle out of the waffle iron and immediately twist it into a bag while still hot, place in a glass and let cool down a little.

  6. For chocolate wafers, replace 20 g of the cornstarch with cocoa powder.
  7. For nut wafers, replace 50 g of flour with 50 g of ground hazelnuts.
