Mix buckwheat flour with starch and baking powder. Beat eggs with sugar, a pinch of salt and soft butter until frothy. First stir in the milk and then add the flour mixture.
Let rest for about 15 minutes.
Grease the waffle iron with a little butter and bake golden-brown waffles in portions.
The buckwheat waffles are soft, not too sweet and have a slightly nutty taste. Apple compote or whipped cream with fresh fruit or jam go very well with it.
The amount of dough for me, in a heart waffle iron, is 8-10 pieces.
