Dice all ingredients except about a third of the feta and pepper and mix. Finely chop the parsley and add. The mixture is poured into small bowls in portions. The bowl is skillfully turned over a salad plate. The salad is now on the plate, the original shape in the bowl is retained. The sheep cheese is rubbed over the salad with a kitchen grater. Garnish with pepperoni and olives.
This goes well with farmer`s bread, flatbread, white wine.
You can use goat cheese instead of sheep cheese.
Ovchar is the Bulgarian word for shepherd, hence the name Ovcharskasalat.
