Dice the sweet red onion and the 2 red bell peppers.
Heat the 2 tablespoons of olive oil in a large saucepan over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened.
Add the 600g ground beef and cook for 5-7 minutes, breaking it up with a spoon, until browned.
Add the diced bell peppers, 200g drained canned corn, 250g drained canned white beans, 100g BBQ sauce, a pinch of ground dried garlic, and roughly half of the 400g shredded cheddar cheese to the meat mixture. Stir and cook for 3-5 minutes, then remove from heat.
Lay a tortilla flat on a clean surface. Sprinkle with roughly 1-2 tablespoons of the remaining cheddar cheese, then place 2-3 tablespoons of the meat filling in the center. Fold the sides inward and roll tightly from bottom to top. Repeat for all 12 tortillas.
Heat a skillet or griddle over medium-high heat. Place each burrito seam-side down and cook for 1-2 minutes until golden, then flip and cook the other side for 1-2 minutes. Repeat for all burritos.
