  1. For the spice marinade, mix 3 pinches of salt, cumin, cayenne pepper, paprika powder, chilli flakes, chopped garlic and 2 tablespoons of olive oil in a bowl and let it steep a little.
  2. Fry the minced meat in a pan with olive oil. Vegetarians can replace it with mushrooms, peppers or cucumbers, for example. Chop the onion and chilli peppers and add to the minced meat. If you don`t like it hot, you can first cut the chilli in half crosswise and scrape out the stones. Then add the spice marinade to the minced meat and briefly toast the whole thing. Season with pepper and add beans, corn and tomatoes one after the other. Chop the coriander and the stalks and stir in. Let everything simmer for about a minute while cutting the avocado into strips.
  3. For the burritos filling, peel and core the avocado and cut into strips. Place three avocado strips in the middle of each corn cake, crumble some feta cheese on top and add 2 tablespoons of the minced meat mixture. Then fold the flatbread in right and left and roll up. Fabio shows you how this works in the video. Place the rolled up flatbread in a baking dish so that it cannot roll up again. Place all the flatbreads side by side in the baking dish and sprinkle with the remaining minced meat mixture and the cheddar.
  4. Now the burritos come in the 180 degree oven for about 6 to 7 minutes. Before serving, you can decorate them with crème fraîche and coriander.
