For the egg threads, whisk the egg yolks together and melt the butter with the oil in the pan. Slowly stir the eggs into the hot butter mixture while stirring vigorously, quickly and constantly, and continue to heat and stir until the threads are lightly browned. Salt a little and put the finished threads on a sieve, squeeze out and drain.
Pat the prawns dry, deep fry until pink and remove.
Melt the butter in the pan and briefly fry the garlic, chilli and curry leaves. Then add the prawns, as well as the sugar, salt and pepper, mix everything well and continue to fry briefly.
Either mix with the egg threads before serving or simply distribute the egg threads on top.
