Instructions

  1. Mix the 2 types of flour, oat flakes, sugar and salt dry. Add the quark and buttermilk. Crumble in the yeast and knead the dough for 10 minutes.
  2. Cover the dough and let it rise. As soon as the dough has broken up a bit, beat together again. Repeat this process several times.
  3. Spread a thin layer of oil on a loaf pan and dust with flour. Put in the bread dough, cut a little and brush with water. Sprinkle the bread with oat flakes, let the dough rise again briefly.
  4. Preheat the oven to 250 ° C, then bake the bread at approx. 200 ° C for about 50-60 minutes.
  5. Put approx. 300 ml of water in a bowl in the oven to generate steam. Brush the bread twice with water during the last 10 minutes.
