Instructions

  1. Put the buttermilk with the eggs, flour and salt in a bowl and stir to a smooth batter.
  2. Heat some fat in a pan and fry buttermilk crepes in portions. Take out and deploy.
  3. Peel the grapefruit thinly and cut out the fillets with a sharp knife. Squeeze the rest of the pulp well and collect the juice. Drizzle the grapefruit fillets with orange liqueur and sprinkle with vanilla sugar.
  4. Let the sugar caramelize briefly in a pan. Pour in the white wine and orange juice and simmer the caramel. Put the grapefruit fillets with the grapefruit juice in the sauce and heat briefly.
  5. Fold up the crepes and heat them up in the sauce. Arrange decoratively on plates and cover with the fruit and the sauce. Garnish with whipped, sweetened cream and chocolate flakes and serve immediately.
