  1. Finely chop the cabbage and place in a deep bowl.
  2. Pour hot water over the cabbage and leave until softened, for 3-4 minutes.
  3. Drain and place the cabbage on a napkin to dry.
  4. Break eggs. Separate the yolks from the whites.
  5. Send soft butter (50 g) and yolks to a bowl.
  6. Grind the butter with the yolks with a whisk until smooth.
  7. Grind most of the nuts in a mortar. Use the rest of the nuts to sprinkle on the cabbage mass before sending it to the oven.
  8. Pour semolina and chopped nuts into the oil-yolk mixture. Mix.
  9. Grate cheese on a fine grater and add to a bowl too.
  10. Add cabbage, salt, and pepper to taste. Mix.
  11. Beat the cooled proteins with a pinch of salt with a mixer or blender whisk until fluffy, strong foam. Beat for 2-3 minutes at high speed.
  12. Add the whipped proteins to the cabbage mixture. Mix gently.
  13. Add nutmeg. Mix.
  14. Preheat the oven to 180 degrees. Grease the dish with a small piece of butter and sprinkle with semolina. Put the cabbage mass into a mold and flatten.
  15. Sprinkle the remaining nuts on top and add the pieces of the remaining butter.
  16. Bake cabbage with cheese and nuts in the oven at 180 degrees for 30 minutes, until cooked and golden brown. Finely chop the parsley. Sprinkle the cabbage casserole with cheese and nuts with chopped parsley and serve.
