Instructions

  1. Cut the bread and ham or bacon into cubes.
  2. Finely chop the small onion.
  3. Put the 6 eggs in a bowl, whisk them together, and season with salt and pepper to taste.
  4. Heat roughly 2 tablespoons of butter or oil in a large pan over medium-high heat.
  5. Add the bread cubes and chopped onion, and cook for 3-4 minutes, stirring occasionally, until the bread is lightly toasted.
  6. Add the ham or bacon cubes and fry for 2-3 minutes until heated through.
  7. Pour the egg mixture over the ingredients in the pan.
  8. Cook over medium heat for 3-5 minutes, stirring gently once or twice, until the eggs are set and cooked through.
  9. Transfer to a serving plate, and sprinkle with finely chopped parsley or chives.
