- Cut the bread and ham or bacon into cubes.
- Finely chop the small onion.
- Put the 6 eggs in a bowl, whisk them together, and season with salt and pepper to taste.
- Heat roughly 2 tablespoons of butter or oil in a large pan over medium-high heat.
- Add the bread cubes and chopped onion, and cook for 3-4 minutes, stirring occasionally, until the bread is lightly toasted.
- Add the ham or bacon cubes and fry for 2-3 minutes until heated through.
- Pour the egg mixture over the ingredients in the pan.
- Cook over medium heat for 3-5 minutes, stirring gently once or twice, until the eggs are set and cooked through.
- Transfer to a serving plate, and sprinkle with finely chopped parsley or chives.
