Instructions

  1. Mix the flour with the baking powder, oat flakes, sugar and salt and stir. Add milk, eggs and oil and let it steep (the oatmeal soaks up in time, which is what makes the pancakes so fluffy). Depending on your needs and the type of oatmeal, a little more milk may be needed. Then let it rest for about 15-20 minutes. After the resting time, fry the whole thing in portions until golden brown in a pan.
  2. Maple syrup goes best with it, but jam also tastes good with it.

  4. Depending on how fast it has to go, you can start frying after waiting 5 minutes, but in my experience it tastes better if you wait at least 15-20 minutes.
  5. The recipe was brought to me from Canada and is originally designed for the red Canadian cups. Approx. 250ml of water fits into a cup if you want to measure the whole thing with a measuring cup.
  6. I also like to make a baking mix out of all the dry ingredients and then, when visitors come or when things have to go quickly, all I have to do is add milk, eggs and oil.
