A simple but incredibly delicious appetizer in the form of miniature herring sandwiches. The curious thing about this recipe is that the pieces of salted herring are first marinated with spices and vodka. The butter is mixed with coriander and dill and becomes extremely aromatic.

  1. Mix herring fillet pieces with vodka, a pinch of sugar, and ground hot pepper. Refrigerate for up to 3 hours.
  2. Heat a frying pan over medium-high heat. Toast the coriander seeds for 2 minutes, then grind in a mortar.
  3. Wash the dill and chop finely.
  4. Mix soft butter with a pinch of salt, the ground coriander, and chopped dill.
  5. Peel the apple and cut into thin slices. Pour lemon juice over immediately to prevent browning.
  6. Cut bread slices (without crusts) into small triangles. Spread each triangle with the herb butter mixture.
  7. Top each bread triangle with apple slices and herring pieces.
