Remove the core from the apple using an apple corer. Cut the apple into rings. Heat 1 tablespoon of olive oil in a pan over high heat. Fry the apple rings for 2 minutes on each side until caramelized. Transfer to a plate. Slice the sandwich bread into 6 portions or cut 3 mini buns in half. Toast if desired. Remove the membrane from the beef liver and cut into portions the size of the bread pieces. Mix salt into the flour. Dip each piece of liver in the flour mixture. Heat 2 tablespoons of olive oil in a pan over medium-high heat. Fry the liver for 4-5 minutes on each side until cooked through. Transfer to a plate. Peel the onion and cut into thin rings. In the same pan, fry the onion rings over medium heat, stirring, for 7-10 minutes until golden brown. Spread mayonnaise on each bread portion. Place an apple ring on top of the mayonnaise. Place a piece of liver and some caramelized onion on top of the apple. Finely chop the parsley and sprinkle on each canapé. Secure the layers with a skewer. Serve the canapes warm.
