Wash the potatoes, put them in a saucepan with their skins and cover half of them with water. Sprinkle sea salt on top, bring to the boil and cook covered for approx. 30 minutes. Remove the lid and let the remaining water evaporate.
Core the chili peppers and cut into strips. Roughly dice the paprika, coarsely chop the garlic, finely puree with the chilli strips and vinegar. Slowly add the oil until the mass is set. Season with sugar, salt, paprika and cumin and serve the sauce with the potatoes.
