Instructions

  1. Wash the celery, cut into slices approx. 3 cm thick. Then peel the slices and rub them into coarser pencils with a grater. Grating has to be done quickly, otherwise the celery will turn brown - it`s best to drizzle the grated celery with lemon juice.
  2. Bring 2 liters of water and the citric acid to the boil and boil the grated celery for 2 minutes, drain and pour into glasses (to collect the cooking stock).
  3. Make a brew from the 1/4 l cucumber infusion, a 1/4 l cooking stock, salt, sugar and preserving aid and fill the jars to the point of overflow. Seal and heat in the microwave at full power for approx. 3 minutes per 0.5 l jar. The lid needs to bulge slightly so that the jar rocks a little when you turn it upside down. If not, reheat briefly. Several glasses in the microwave extend the boiling time.
