First bring the vinegar, oil and spices to the boil, then grate the cabbage, halve the onion and cut into strips. Peel and mash the garlic and add to the saucepan, let it cook until the cabbage is soft but still has a bite.
Then cut the peppers into strips, slice the carrots into strips and add them. Bring everything to the boil again, season again if necessary and fill hot into twist-off glasses.
Let cool down. Let it steep for at least a week.
We mix the whole thing with a light mayo for dinner, so then we have a kind of cole slaw. Delicious.
