Divide the almond biscuits in 4 tall dessert glasses. Mix 3 tablespoons of cherry juice with 2 tablespoons of amaretto and sprinkle the biscuits with it, place the cherries on the cantuccini, sprinkle half of the chopped almonds on top.
Mix the mascarpone, quark, lemon juice and zest, the remaining 2 tablespoons of amaretto, sugar and vanilla sugar into a cream and spread over the cherries, decorate with the remaining almonds and some cherries.
Let it steep in the refrigerator for at least 30 minutes.
