Drizzle the cantuccini with amaretto or juice in a serving bowl. Mix egg yolks or cream with sugar and mascarpone. Spread the cream on the cantuccini.
Place in the refrigerator for 6 - 8 hours.
Before serving, cut the peaches into beautiful wedges and place on the cooled cream. Caramelize the almonds with butter and sugar and sprinkle over the peaches.
