Instructions

  1. Soak gelatine and set aside.
  2. Put the yolk and egg in a bowl and whip creamy with powdered sugar, salt and vanilla sugar on a hot water bath.
  3. Heat the rum and dissolve the soaked and squeezed gelatin in it, beat into the foam mass and stir carefully. Put in the mascarpone. Whip the cream until stiff and fold in.
  4. Mix the espresso with the orange liqueur in a deep plate and dip the cantuccini in until they are a little soaked. Divide the cantuccini in 5 dessert glasses and cover with half of the cream. Spread three quarters of the grated chocolate on the cream in the glasses. Then put the rest of the cream on top and place the jars in the freezer for 15 minutes.
  5. Garnish with the remaining chocolate shavings and a few grapes.
  6. Decorate with marbled chocolate flakes if you like.
