Instructions

  1. Place the zucchini slices in a baking dish.
  2. Drizzle with 2 tablespoons of oil.
  3. Season the zucchini with salt and pepper.
  4. Season the pork slices with salt and pepper.
  5. Place the pork slices on top of the zucchini.
  6. Arrange the tomato and mozzarella slices on top of the pork.
  7. Dust with a pinch of cayenne pepper.
  8. Bake at 200°C (392°F) for 20 minutes, until the pork reaches an internal temperature of 63°C (145°F).
  9. Drizzle with the pesto.
  10. Garnish with basil if desired.
