Instructions

  1. Peel the apples and remove the cores. Mix the jam, rum, raisins, and ground walnuts. Stuff this mixture into the apples.
  2. Place the sugar in an ovenproof dish over medium heat and let it caramelize, about 5-8 minutes. Swivel the dish so the caramel coats the bottom and sides. Arrange the apples in the dish and pour the milk with a splash of rum over them. Bake at 200°C (392°F) for 25-30 minutes until the apples are soft.
  3. Remove the apples from the oven and lower the temperature to 150-180°C (302-356°F). Beat the 8 egg whites until stiff peaks form. Gradually beat in the sugar and cold water, then carefully fold in the egg yolks. Sift together the flour and baking powder, then carefully fold into the egg mixture. Pour this batter over the hot apples and bake for another 40 minutes until the top is golden brown (test with a toothpick to ensure it's cooked through).
  4. Let cool for 5-10 minutes, then carefully invert onto a large round plate so the cake is on the bottom and apples are on top. Let cool completely, then garnish with freshly whipped cream.
