Instructions

  1. Remove the stalk from the figs, cut the figs in half lengthways and set aside. Preheat the oven to 170 degrees.
  2. Mix the cream cheese with the cream and finely chopped needles from one of the rosemary sprigs and season with pepper.
  3. Caramelize 2 tablespoons of butter with the sugar in a coated pan, then place the figs in the pan with the cut side down. Fry for a moment, then pour in the red wine, toss the figs a little in the pan, but do not turn them. Add the remaining sprigs of rosemary to the pan. Put a lid on the pan for 5 minutes, then open the lid and wait until the wine has boiled down into a syrupy sauce. Now place the figs in a casserole dish brushed with butter with the cut surface facing up. Spread the goat cheese cream on top. Pour the syrup from the pan over and next to the figs, sprinkle the rosemary sprigs around it and bake the figs in the oven for about 10 minutes.
  4. Arrange 2 halves of the fig on each plate, drizzle with a little crema di balsamic vinegar and serve immediately!
