Sift the flour, baking powder, salt and 2 tablespoons of sugar together and mix. Separate the eggs. Beat the egg whites until stiff, stir the egg yolks until frothy. Add the egg yolk, egg whites, milk, oil and lemon peel flavor to the dry ingredients. Carefully fold in everything and let rest for half an hour.
Peel the apples, cut them into pieces and remove the core. Process the apple pieces into sticks and fold into the dough.
Heat a greased pan, add a ladle of batter and bake until the surface has dried and bubbles. Turn the pancake and bake the second side in the same way. Take the finished pancake out of the pan and keep it warm. Do the same with the rest of the dough until it is all used up.
Sprinkle the pancakes with 1 tablespoon each of sugar and caramelize with the gourmet burner. Arrange and serve.
