Mix the red wine, port wine, juice and sugar and bring to the boil; Simmer at medium temperature for 8 minutes and reduce to about halfway.

Either produce red wine ice from it in the ice cream machine in about 30 minutes or put it in a metal bowl and freeze in the freezer for at least 8 hours. Stir it more often with a fork so that no coarse ice crystals form. Prepare the pears and mix with the lemon juice. Leave out 50g butter in a saucepan, add the sugar and lightly caramelize, fold in the honey; Add the pear wedges with the walnuts, let them steep for about 5 minutes, lift out and serve with the red wine ice cream.
