Cut meat into small cubes and turn in flour, fry in olive oil in an ovenproof saucepan. Add onion, garlic, chopped jalapeño, spices and stock and bring to the boil. Place in the oven with the lid on for approx. 2 - 2 1/2 hours, stirring occasionally. Finally, taste again and enjoy in small tortiilas with sour cream and salsa like tacos without a knife and fork.
