Wash the carrots and peel them with the peeler. Grate the coarse side of the grater and place in a bowl. Wash and grate the apple and add to the carrots. Peel the onion, cut into fine cubes and add to it. Wash the parsley, chop it finely and add it as well. Mix everything well.
Make a dressing from vinegar, sunflower oil, lemon juice, salt and sugar and pour over it. Finally, season everything well with freshly ground pepper.
