Roast the peanuts on a low flame until golden brown without oil. Peel and grate the carrots and cucumber. Finely chop the parsley and press the garlic.
Mix everything together and add the soy sauce and lemon juice. Pepper and salt to taste and sprinkle with the peanuts before serving.
Even tastes a little better when pulled through.
If it is too acidic without oil, you can add some sesame or peanut oil.
