Julienne or roughly grate the carrots and mix with the peanuts. Whip oil, lemon juice (the amount is correct, the dressing should be rather sour) and pepper and possibly a little salt to make a dressing and pour over the carrot and nut mixture. Mix and let steep for a few hours.
The salad can be eaten on its own, but is also good as a side dish when grilling. Can be prepared the evening before and wait in the refrigerator to be used.
