Instructions

  1. Peel the carrots and sweet potatoes and cut into small pieces. Finely chop the onion and ginger, press the garlic clove.
  2. Let the oil get hot in a large saucepan and briefly fry the onion with the ginger and garlic in it, dust the garam masala over it and fry until the fragrance unfolds.
  3. Put the vegetables in the pot and fry them briefly. Then deglaze everything with the vegetable stock. Bring to the boil and simmer for approx. 15 minutes until the vegetables are soft. Puree everything finely with a blender. Finally add the coconut milk and season the soup with salt and pepper.
