Instructions

  1. Sweat the roughly chopped young carrots and potatoes, the apple and the spring onions in olive oil. Pour the vegetable stock on top, simmer gently for 15 - 20 minutes.
  2. Add the freshly grated ginger and puree everything with the hand blender. Season to taste with salt, pepper and cream.
