Cut the cleaned carrots into pieces about 5 centimeters long. Add the savory, sugar and salt. Cut the onion very small and add it as well. Fill up with water and cook for about 15 minutes, not too soft.
Drain the water. Mash the carrots with a potato masher - but not as much as with the mashed potatoes! There should be little bits left in there! Season with salt and pepper, garnish with parsley.
Of course, you can experiment with other spices here.
Tastes great with beef dishes such as roulades or braised beef.
