Instructions

  1. Cook the diced vegetables, sweet potatoes, spring onions with water and spices (except for the curry powder) in a pressure cooker for about 15-20 minutes. Let off steam, open the pot, puree the soup with the hand blender or pass it through the Lotte (passe-vite) liquor.
  2. Finally, fold in the cream and season with spicy (!) Curry powder. Sprinkle with chopped parsley.
  3. Instead of carrots, you can also use pumpkin meat and potatoes (depending on the season). Instead of the cream, you can also use crème fraîche or coconut milk.
