Instructions

  1. Cook the noodles in salted water according to the instructions on the packet until they are firm to the bite.
  2. In the meantime, peel and rinse the carrots, then cut thin slices lengthways with a peeler. Wash the spring onions and cut into rings.
  3. Heat the olive oil and fry the carrots in it. A few minutes later add the spring onions and fry with them. Deglaze with the vegetable stock, bring to the boil and reduce a little. Add the cream and crème légère, mix everything. Bring to the boil again and season well with salt and pepper.
  4. Fold in the drained spaghetti and arrange everything immediately on plates.
