Heat the olive oil in a pan and steam the grated carrots in it (do not let it take color). This process takes about 15 minutes.Stir again and again in between. Let the carrots cool down.
In the meantime, peel the garlic and process it into a pulp with the salt (alternatively crush with a garlic press).
Mix the yogurt with the garlic, then with the carrots and serve.
Finally, decorate with the parsley, mint or chilli flakes as desired.
You can also process beetroot (fresh) in the same way.
