Clean the potatoes and vegetables, (if necessary peel), grate and mix well with the flour and egg in a bowl. Then season with salt and pepper.
Shape the carrot batter into small hamburger patties. Heat the olive oil in a pan (preferably a non-stick pan) and fry the veggie burgers well on both sides.
The hamburgers can be served like a real burger, as a side dish or simply with a little grated parmesan. You can also bake the dough very well in flat form (tastes even crisper).
