Put the garlic, shallots and ginger in a blender and then mix with half of the oil until everything is really fine.
Pour 1.5-2 l into a larger bottle and rinse the blender with the rest of the oil to get the last of the remains into the bottle.
Let it steep in a dark and cool place for 4 days to a week, shaking it 1-2 times a day. Then filter through a sieve with 2 layers of kitchen paper and fill into clean bottles.
I like to make shrimp with it, just fry in it, lightly salt and melt a little creme fraiche over it.
