Wash the meat well, put it in a bowl. Mix all the ingredients for the marinade with the meat in the bowl. Let rest for at least 5 minutes.
In the meantime, wash the celery stalks well, remove the threads and cut the stalks diagonally. Peel the ginger and cut into thick slices. Peel and finely chop the garlic.
Heat the oil in a wok, add the cashew nuts, toast until golden brown. Take out the nuts.
Heat the remaining oil in the wok over the highest heat, add the ginger, fry for 20 seconds. Add the meat, fry well. After 30 seconds add the garlic and continue frying. After 1 minute, add the celery and 1 teaspoon of salt, mix well, continue to fry for 1.5 minutes until the meat is cooked through.
