The freshly chopped beef tartare is mixed well with finely diced onion, salt, pepper, paprika (hot or sweet as desired), nutmeg and a very fresh egg yolk. Arrange immediately with bread or rolls.
Tip:
A little softened butter can be folded in if the mixture is still too dry.
This dish requires very fresh, high quality ingredients.
Worcestershire sauce, mustard and a dollop of anchovy paste round off the taste.
