Clean the cauliflower, cut into florets and cook in plenty of salted water until firm to the bite.
Chop the onions and garlic, clean and wash the carrots and cut into slices and cut the tomatoes into small pieces. Heat a pan with the olive oil, fry the onions, garlic, tomatoes and carrots in it and add the vegetarian mince. Add the cream and crème fraîche. Season with a pinch of sugar, Italian herbs and curry and simmer for 5 minutes.
Spread the cooked cauliflower in a baking dish, pour over the minced vegetable sauce and fold in. Scatter the grated Gouda cheese on top and bake everything in the oven at 200 degrees for 15 minutes until the cheese has melted and browned.
