Instructions

  1. Wash cauliflower, cut off leaves and hard stems. Grate the cauliflower florets fine to medium-sized. You can rub the stems, but you don`t have to rub them with them.
  2. Separate eggs. Add 2 egg yolks, flour and milk to the grated mixture, stir and season well with salt or vegetable stock and pepper. Beat the egg whites until stiff and fold into the mixture. Possibly add seasoning. The finished dough will be viscous.
  3. Heat clarified butter or oil in a pan. Shape small patties directly into the fat with a tablespoon and fry until golden brown.
  4. Boiled potatoes, mashed potatoes, a mixed salad or ketchup, spring quark and white bread taste great as a side dish.
