Instructions

  1. Divide the cauliflower into florets and cook until cooked. Put the cauliflower in another saucepan and scoop enough of the cooking water over it to just cover the cauliflower. Puree the cauliflower with the cutting stick and, if the soup is still too thick, add more cooking water. Now add the processed cheese to the soup, bring to the boil 1 x and let the cheese melt.
  2. Meanwhile, roast the sunflower seeds without fat over medium heat until golden yellow. Now season the soup well with salt, pepper, nutmeg and, if you have it, lovage. Cut the ham into strips and add to the soup or directly on the plates, distribute the soup on the plates and sprinkle the roasted sunflower seeds on top. Now cut a good portion of chives into short rolls and sprinkle over the soup plates.
  3. Tip: If you want more to chew, puree the soup less and add more ham. If you don`t have processed cheese, you can also use a large cup of low-fat herbal cream cheese. Lovage can also be added as fresh leaves (approx. 3-4) when cooking the cauliflower.
