Peel the sweet potato and cut into large cubes. Chop the cauliflower into its florets. Let both simmer together in lightly salted water for about 10 minutes. Then pour off some of the cooking water (I always leave 3 cm of cooking water in and then add some broth to taste).
Mash everything with the potato masher until a puree is made. Mix in the parmesan and season the puree with salt and pepper.
As a main course, it is probably enough for two good servings as a side dish for 4 people.
