Instructions

  1. Cut the stalk from the cauliflower so that it stays whole. Wash and simmer in a saucepan with salted water with the nutmeg and sugar. The pulp should still be firm to the bite.
  2. Remove the cooked head with a slotted spoon and place in a bowl, drained well.
  3. Tip: The liquid can be used as a broth for other dishes.
  4. Melt the butter in a pan, add the crumbs and brown while stirring several times. Spread this evenly over the cauliflower. Finally, sprinkle the grated Parmesan on top and bake in the hot oven with the grill function switched on until it is evenly browned.
  5. The cauliflower with brown butter is ready to serve and an ideal accompaniment to meat of all kinds.
